It takes a wise guy to come up with a "wheat beer” that’s really a white ale with a hint of wheat. That’s what Trev the brewer did, so we named it after him. Our Weiss Guy is a smooth white ale with with subtle notes of citrus from dry-hopped Nelson Sauvin hops. Conveniently, ‘weiss' is also the German word for white, and Germany is where both wheat and white beer first came from. Very ‘weiss’ indeed.
BREWERS NOTES: It’s no secret - I have a love hate relationship with wheat. I love the fruity, spicy, zesty flavour divergence that comes from yeast feasting on wheat-loaded worts, but I hate the way it bogs the Brewhouse down and stuffs the lauter run off, so when I promised them a 80/20 wheat beer, I pulled a swifty and used 80% Malt and 20% Wheat. Nelson Sauvin is the perfect companion for dry hopping, with its passionfruit and citrus notes, and that’s when I had the idea to infuse the tiniest amount of passionfruit juice to boost that summer appeal just a tad more.
FOOD MATCH: Light dishes (salads) or Asian dishes – our wheat beer has subtle undertones of citrus which don’t overpower the lighter dishes but pull out the freshness of the food.
